No-bake Strawberry Cranberry Cheesecake

Ingredients (for a tall 9 inch cheesecake)
– Laura Chenel cranberry goat cheese logs (2)
– Kraft Philadelphia cream cheese (1 1/2 cup)
– Organic Date Sugar (2/3 cup)
– Sprinkle of Maldon sea salt (1/4 tsp)
– Fresh fruit like strawberries, sliced into halves

For the crust
– Caramel corn (16oz)
– Unsalted Kerrygold butter (1 stick)

Instructions
1) In a food processor, blend the butter and the caramel corn until its a fine texture and sticks together like a crumble
2) Lightly spray a 9inch spring foam pan
3) Using a spatula, press down the crumble in one even layer and leave it in the freezer for 10-15 minutes
5) Using a hand mixer, mix the cheeses and date sugar and salt
6) Layer the cheese mix on the solidified caramel corn base.
7) Decorate with the berries and leave in the fridge for 8-12 hours prior to enjoying.
