Banana Coconut Oat Pancakes

Pajama mornings and pancakes are a must-have in my house and when they are so nutritious and yummy, then a stack is needed!


Recipe: Makes 8 6-in pancakes

Add pancake mix in the blender with-

  • 2 eggs
  • 1 large semi-ripe banana
  • 11/2 cups toasted bobsredmill gluten-free rolled oats
  • 1/2 cup unsweetened almond or coconut milk
  • 1/4 tsp sea salt
  • 1 tsp pure vanilla extract
  • 1/4 tsp cinnamon
  • 2 tsp baking powder
  • 1 scoop vitalproteins collagen powder

Blend the above. Warm a skillet with virgin coconut oil. Drop a 6-inch size pancake dollop. Add chocolate chips or roasted walnuts as the bottom starts to turn golden brown.

Stack them and top with your favorite fruit.

I used kerrygoldusa Irish unsalted butter and my favorite low GI syrup Silan by soomfoods.
